Watermelon Mint Sorbet
Ever since I ordered my first “Watermelon Heaven” at a local boba shop a few weeks ago, I’ve been on a HUGE watermelon kick!
The drink is a simple frozen slush made with real watermelon — nothing fancy or special, but absolutely wonderful for a hot summer day.
Light, refreshing and especially delicious when cold, watermelon is the quintessential summer fruit. Paired with mint and frozen, the resulting watermelon mint sorbet is currently my favorite summer treat!
WATERMELON MINT SORBET RECIPE
Ingredients:
4 cups puréed watermelon
1 cup sugar – If you prefer your sorbet to be less sweet, you can reduce the sugar to a 3/4 cup, but the texture will become a bit more icy rather than smooth.
2 tbsp chopped mint
4 tbsp alcohol (optional) – Only add the alcohol if you plan on storing this in the freezer. It’s not necessary if you’re serving right away. I used Seagram’s Extra Smooth Vodka, which is 40 proof.
Steps:
Use a blender to purée cubed watermelon chunks.
After creating 4 cups of puréed watermelon, pour it through a metal strainer to remove all the seeds.
Add the sugar and chopped mint into the blender with the puréed watermelon. Blend to ensure that the mint and sugar are incorporated seamlessly into the mix.
Leave the mixture at room temperature for a few hours to allow time for the sugar to dissolve completely. Once dissolved, place in the refrigerator for a few hours to cool the mixture.
Once cool, pour the mixture into an ice cream maker and set the timer for about 25 minutes.
In the last two minutes of churning, add the alcohol into the mix, if you plan on storing in the freezer.
Serve immediately! (Or if you’ve added the alcohol, freeze, then enjoy!)
